This 6 ingredient chicken casserole is super easy to prepare and is a favorite with the kids.
Layer in a round casserole dish:
1 pound skinless boneless chicken breasts or one large can of chicken breast
1/2 jar of your favorite salsa
1/2 can of black beans
1 cup monterey jack cheese or “fiesta” cheese
1 can of enchilada sauce
4 (6-inch) corn tortillas
Preheat oven to 350 degrees F. Coat 2 quart casserole dish with cooking spray.
Spray a large nonstick skillet with cooking spray and cook chicken breasts on medium heat until done. Remove chicken from skillet and let cool. Shred chicken with 2 forks; set aside.
Layer tortillas, chicken, salsa, cheese, and black beans in dish. Repeat layers 3 times, with the top layer being a tortilla with enchilada sauce and sprinkled cheese.
Bake, uncovered, for 40 minutes or until hot. Serve with sour cream. The remaining salsa and black beans can be combined to make a delicious black bean salsa for dipping.

One of my new favorite way to cook things is to dump a jar of salsa in the crock pot with meat. It’s easy and it always comes out great
