Some of my favorite memories of my childhood revolved around the dining room table at my granny’s house where she would serve warm jam cake and sweet iced tea. It was pure deliciousness!! My mom and aunt took over after my grandma passed and it continues to be one of my all-time favorite desserts.
Jam Cake
2 c flour
1 c sugar
½ c raisins (mix with flour and they won’t sink to the bottom)
1 tbsp cinnamon
1 tsp cloves
1 tsp nutmeg
1 tsp allspice
½ c shortening or 1 stick butter
1 c seedless blackberry jam
2 eggs
1 tsp soda
1 c buttermilk
Mix well and bake in 2 round cake pans at 350°for 30 min
Penuche frosting
1 c brown sugar
½ c butter
¼ c milk
1 ¾ – 2 c confectioners sugar
Melt butter, add brown sugar and boil 2 min. Stir in milk. Stir until it comes to a boil. Cool to lukewarm. Add the sifted powdered sugar and beat until spreading consistency.
Add walnut halves or crushed walnuts on top of the icing for an extra flavorful boost.
